Seared Bonito (Katsuo Tataki)
This wild bonito was caught in the Pacific Ocean then flash frozen on board to preserve its freshness. After being brought to a fishing port at Yaizu, Japan, it was then seared with natural charcoal, giving it its unique and appetising aroma.
Slice the bonito to thick sashimi pieces and serve with the accompanying sauce or soy sauce. Garnish with spring onions and add garlic and citrus juice to preference.
